1/4 cup oil
1 chicken, cut up
1 1/2 lb sausage
4 cups onion
2 cups celery
2 cups bell peppers
1 Tbs chopped garlic
4 cups rice
5 cups water or stock
salt
cayenne pepper
1 cup green onions
1 cup parsley, chopped
Sauté sausage in oil, remove from pot
Season and brown chicken in pot, remove
or brown Jambayala, add heaping Tbs brown sugar to pot and caramelize. For red, omit.
Sauté onion, celery, peppers, and garlic.
Return chicken to pot and simmer with veggies
Add water and bring to boil.
Salt and pepper to taste.
Stir in rice and return to boil. Add sausage.
Reduce heat and simmer covered for 30 to 40 minutes.
Turn rice from top to bottom of pot. Add parsley and green onions and continue cooking for 15 minutes.
